Runtime variables Qs

From the Help:

"You can easily insert variables where applicable by pressing CRTL-Right
Mouse button simultaneously on an edit field. This will open a screen that
will allow you to select the variable that you want to insert. "

But not in Script Editor mode, it seems - where I would have thought it was
essential.

How? - how do I create my own run-time variables?

The script editor isn't totally freeform.

Ctrl-RightClick works within the definition screen for a script item.

For example, the Set Variable item opens a window. The top item (variable
name) has a dropdown or you can type in your own variable name (which will
create a new variable).
The New Value line doesn't have a dropdown. Unless you Ctrl-RightClick it
