Is there a way to add items to the uninstall log or will I need to
create a custom uninstall to remove files that were not installed but
created by running my program?

The custom uninstall script can remove files that were not installed but
created by running your program. Just create a new uninstall .sbi and add
it to your main .sb7 project. Then you can remove whatever you want.
